The card nudges when a stage changes, and where the browser allows it the screen stays awake mid-brew. Cold brew fans: the timer maxes out well before twelve hours. Use a fridge and a good night's sleep.

Pour over

Coffee 18 g, medium-fine

Water 300 g at 94°C

Total time 2:45

Best with Snail Mail

  1. Rinse the paper filter and warm your mug. Discard the rinse water.
  2. Add coffee, then 50 g of water. Wait one minute while it blooms. This is the slow part; enjoy it.
  3. Pour the rest in slow circles, finishing by 1:45 on the clock.
  4. Drawdown ends around 2:45. Swirl, sip, feel smug.

French press

Coffee 30 g, coarse

Water 500 g at 95°C

Steep 4:00

Best with Slow Lane

  1. Add coffee, pour all the water, and give it one gentle stir.
  2. Set the timer for four minutes. Lid on, plunger up.
  3. At four minutes, skim the crust off the top with a spoon.
  4. Press slowly, pour immediately, and do not let it sit on the grounds.

AeroPress

Coffee 15 g, medium

Water 220 g at 90°C

Steep 1:30, then press 0:20

Best with Sunday Molasses

  1. Standard orientation, rinsed paper filter, coffee in, water to the top.
  2. Stir three times. Cap on. Timer on: ninety seconds.
  3. Press gently for about twenty seconds. Stop at the hiss.
  4. Top up with hot water to taste if you like it longer.

Espresso

Coffee 18 g, fine

Best with Slow Lane

  1. Grind fine, distribute flat, tamp level. Wonky beds make sour shots.
  2. Start the pull and the timer together. First drops should show by eight seconds.
  3. Stop near 36 g in the cup, around thirty seconds on the clock.
  4. Ran fast and thin? Grind finer. Choked and bitter? Coarser. Change one thing at a time.

Cold brew

Coffee 100 g, extra coarse

Water 1 L, cold

Steep 12 hours

Best with Slow Lane

  1. Combine coffee and water in a jar. Stir until nothing floats dry.
  2. Fridge, lid on, twelve hours. The most on-brand brew we offer.
  3. Strain through a paper filter twice for a clean cup.
  4. Serve over ice, cut with water or milk one-to-one.
